Low-spoons Hunter's chicken

First low-spoons recipe. Easy peasy hunter's chicken.
I'd never had hunter's chicken before I was trying to find gluten-free ready meals and it was one of the options available. It's apparently a very popular pup grub here in the UK. Who knew? It's a fairly easy recipe on a normal day, but here is my easy peasy low-spoons microwave version.

- Ready to eat frozen cooked chicken in strips or diced4
- Smoked bacon lardons5
- A portion of your fav frozen veggies6
- Your favourite microwave rice/potatoes7
- Your favourite BBQ sauce
- Grated cheese, to taste
How to
- In the microwave bowl, layer the frozen chicken, the lardons and the frozen veggies.8
- Put the lid on the bowl, making sure the steam valve is open, and cook for the amount amount of time is needed for your chicken. Mine is 5 mins.
- Once cooked, remove the lid, stir, add BBQ sauce to taste, stir it in and cover with however much grated cheese you want.
- Put the lid back one and cook for a further 2/3 mins.
- Once cooked, close steam valve to keep warm and put aside.
- Follow the cooking directions for your microwave rice/potatoes.
- Once cooked, place your rice/potatoes on a place and spoon the chicken/bacon/veggies on top of it, pouring the remaining sauce.
And there you have it, yummy hunter's chicken in less than 10 minutes.

Mine is 800 watt, so you'll need to modify cooking time accordingly if yours is different.↩
I use a Sistema 915 ml round microwave bowl, as I've found it the best brand re quality/price, but use what ever you have at hand.↩
I'm not giving you quantities, as I do it by eye and you can use as little or as much as you prefer depending on your appetite.↩
My supermarket offers it already cut, so I don't have to thaw it.↩
You usually find them sold in a pack of two small portions, I use one portion as I don't want to fuss with left overs.↩
I use veggie mix steam bags to make my life easier, but you can use whatever you prefer.↩
I use Basmati microwave rice, but I've eaten it with microwave chips previously, and in the ready meal it was wedge potatoes. I prefer it with rice, but ymmv.↩
This version will make the sauce thinner, which I prefer and it also makes it quicker. If you prefer your sauce thicker, cook the frozen veggies separately in the microwave before/after you've cooked the chicken.↩
It'll be super hot, so let it cool a little to avoid burning yourself. As I've unfortunately done in the past...↩
